a recipe from CAFOD’s Emmaus Meal
2 tablespoons of oil
1 onion, chopped
1 tomato, chopped
A bunch of sukuma (kale or other greens), chopped
Fry the onions in the oil.
Add the tomatoes and sauté for a short time.
Add the greens and sauté again for a short time.
Add half a cup of water and salt to taste. Let the mixture simmer until the greens have reached the desired tenderness.
